Oyster Thermidor

Thermidor is the name given to the revolution in France, which brought with it the fall of Robespierre and his followers in the summer of 1794. This short revolution marked the end of the reign of terror in an apparently very bloody scene. Again, Jules Alciatore brought in a bit of history of which he was reminded by the blood red sauce called Thermidor.

  • 3 dozen oysters on the half shell
  • 3 cups Cocktail Sauce
  • 3 dozen two-inch pieces bacon

Place the oysters in a preheated 400°F oven and bake until their edges begin to curl. Remove from oven and cover with Cocktail Sauce. Top each oyster with a piece of bacon and return to the oven. Cook for 5-7 minutes more.
